Tomato Sauce with Veggies

Description

This vegan tomato sauce recipe can be used with pasta, as sauce on top of your veggies and just about everything else. This tomato sauce is simmered for up to 2 hours to allow the flavours to blend. If you are in a rush simmer for 45 minutes to one hour. The added veggies give the sauce an extra nutrient boost!


Ingredients

  • 2 tablespoons olive oil
  • 1 Large onion (chopped)
  • 2 Medium carrots (chopped)
  • 2 cups mushrooms (sliced)
  • 1 green or red pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 28 ounce can diced tomatoes
  • 1 15 ounce can tomato sauce
  • 1 6 ounce can tomato paste
  • 1/2 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 teaspoons dry parsley
  • 3 teaspoons dry basil
  • 2 teaspoons dry oregano
  • 2 bay leaves

Instructions

  1. In a large pot, heat oil on medium heat, saute onion and carrots for 3-4 minutes, stirring frequently. Stir in mushrooms, green or red pepper and garlic.
  2. Increase temperature to medium-high add all the remaining ingredients and bring to a boil. Reduce heat to medium-low and simmer partially covered for 2 hours.
  3. Remove from heat, season to taste with salt and pepper, remove bay leaves.
