This method for cooking steel-cut oatmeal is a game-changer—perfectly nutty and chewy. The trick? Bring the oats to a boil the night before, let them sit overnight to absorb the water slowly, and then reheat in the morning with your plant-based milk of choice.

- 1/3 cup steel-cut oats
- 1 cup unsweetened plant-based milk
- 1/8 tsp salt
- ¼ raisins
- Top with one grated or diced apple, ½ tsp cinnamon, 1 tbsp each hemp and ground flax.

- In the evening, add 1 cup plant-based milk, 1/3 cup steel-cut oats, salt, and raisins to a medium pot. Stir together and bring to a boil.
- Stir ONCE, turn of the heat, and cover. Leave overnight on the stovetop.
- In the morning, stir in the 1 cup milk of choice and return to a boil. Cover, turn the heat down to low, and simmer for 5 minutes until the liquid is absorbed. If it’s too thick for your liking, go ahead and add some extra milk or hot water.
- Give it one final stir and serve with toppings.
Notes
I use a whole apple for this recipe, go ahead an use less if you want. You can also substitue grated pear.
A drizzle of maple syrup is perfect if you want some extra sweetness.
I also love using organic unsweetened soy milk, it gives a great boost of protein. Again use whatever plant-based milk you prefer.
